  1. Primero cortamos las berenjenas por la mitad. con el cuchillo hacemos unas líneas en la berenjena(profundas) para que se hagan bien. añadimos sal, pimienta y un chorrito de aceite de oliva.
  2. Lo ponemos en un recipiente tapado con papel de aluminio y lo horneamos a 180º unos 20- 25 minutos (hay que ir mirando para ver que están bien)
  3. Cuando estén listas y se enfríen un poquito con la ayuda de una cuchara vamos a ir retirando un poco del interior de la berenjena. Conviene dejarle un poco de su carne para que podamos manejarla meojr si le quitamos demasiada puede que se nos rompa.
  4. A continuación en una sartén vamos a poner un chorrito de aceite de oliva y vamos a sofreír la cebolla, el ajo, los champiñones y los shiitake, y también añadiremos el interior de la berenjena que hemos retirado anteriormente.
  5. Cuando este sofritito vamos a añadir la quinoa previamente enjuagada (para evitar amargor) y vamos a sofreír unos 3-4 minutos más.
  6. Agregamos el doble de agua que de quinoa (si hemos añadido una taza agregaremos dos tazas de agua) tapamos y bajamos el fuego un poco. Dejamos cocer 15min y pasado este tiempo comprobando que este lista la apartamos y la dejamos reposar un poco.
  7. Después a mi me gusta darle con un tenedor para que quede sueltecita.
  8. Rellenamos nuestras berenjenas y listo.
  9. Me sobró bastante quinoa lo hice así aposta para tener para los proximos días pero podéis reducir la cantidad de quinoa a media taza o una taza dependiendo el número de berenjenas que vayáis a rellenar.
  10. Para la salsita de arriba puse los ingredientes arriba indicado en la batidora hasta que estuvo bien integrado y listo. Esto es opcional.
