  3. Mientras dejamos que las berenjenas se horneen, vamos preparando el relleno. Dejamos sofreír la cebolla, los pimientos y el ajo con un poquito de sal y pimienta negra. Después añadiremos las otras verduras, (en este caso yo escogí champiñones, pero puedes escoger las verduras que prefieras), la carne de la berenjena que habremos extraído de la misma y la soja texturizada que ya estará hidratada.
  4. Tras dejar asentar todos los ingredientes unos minutos, añadiremos el tomate triturado, poco a poco iremos moviendo nuestro relleno para mezclarlo todo y, para darle un mayor sabor, podemos añadir tomillo y orégano. Lo dejaremos por unos 5 minutos con cuidado de que no se nos queme ni se quede demasiado seco nuestro relleno. Finalmente cubriremos la piel de la berenjena con el relleno y echaremos el queso por encima. Introduciremos las berenjenas en el horno para gratinar el queso y ¡a comer!
