  1. Precalentar el horno a 170º calor arriba y abajo
  2. Limpiar la berenjena, cortar a lo largo, hacer unos cortes en diagonal en la pulpa, poner un poco de sal y aceite. Poner en una fuente apta para el horno y meter al horno 20-25 minutos hasta que esté dorada
  3. Sacar y dejar templar
  4. Vaciar con cuidado de no romper la piel. Reservar la piel

  6. Subimos el horno a 200º, función gratinar
  7. Con la mezcla rellenamos la piel de la berenjena, ponemos en una fuente apta para el horno y por encima rallamos Grana Padano al gusto y ponemos unos trocitos de mantequilla
  8. Volvemos a meter al horno hasta que el queso esté gratinado. Sacamos y dejamos templar
  9. Emplatamos y por encima ponemos unos filetes de anchoa enrollados y servimos caliente
