  5. Picar muy finos la cebolla y el puerro. Poner a pochar a fuego suave con un poco de aceite de oliva
  6. Picar muy pequeños los champiñones. Cuando la cebolla y el puerro estén blandos añadir los champiñones y dejamos que se hagan
  7. Escurrir muy bien la soja, añadir a la sartén y rehogar unos minutos
  8. Añadimos sal, el ajo granulado, el comino molido y el Ras El Hanout. Rehogamos, añadimos el tomate frito y dejamos todo junto 4-5 minutos
  9. Cuando estén las berenjenas, las sacamos del horno, dejamos templar, vaciamos con cuidado de no romper la piel
  10. Añadimos la pulpa a la sartén y dejamos que se integren los sabores
  11. Ponemos el horno a 250º, función gratinar
  12. Rallamos el queso y reservamos
  13. Rellenamos las berenjenas con la mezcla de la sartén. Ponemos el queso rallado al gusto, reservando un poco para adornar
  14. Las ponemos en una fuente apta para el horno y metemos a gratinar unos minutos, sacamos y dejamos templar
  15. Emplatamos, añadimos unas hojas de rúcula y más queso al gusto
  16. Servimos caliente recién hecho
