- En una fuente de horno coloca un tercio de las rodajas de berenjena, espolvorea con un tercio del queso parmesano, reparte media mozzarella en trocitos y vierte un tercio de la salsa de tomate. Repite la operación. Termina con berejenas y cubre con el resto del tomate , espolvorea con parmesano. Hornea 15 minutos y gratina 5 minutos más.
